Wheat
Milling and feed wheat. Our current programme imports US wheat into the United Kingdom.
US wheat for UK buyers
Wheat is one of the most widely traded grains in the world. Its value to a miller depends on its class and quality: protein content, gluten strength and milling performance decide whether it suits bread, biscuits, cakes or pasta.
The United States grows six classes of wheat, each with different characteristics and end uses. We source the class and grade our customers need from US exporters and deliver it to the UK.
The six classes of US wheat
Classes as described by U.S. Wheat Associates, the export market development organisation for the US wheat industry.
| Class | Character | Typical end uses |
|---|---|---|
| Hard Red Winter (HRW) | The most widely grown US class | Hearth breads, hard rolls, flatbreads, all-purpose flour; used to improve flour blends |
| Hard Red Spring (HRS) | High protein, strong gluten | Premium breads, rolls, bagels, pizza crust; improver in flour blends |
| Soft Red Winter (SRW) | Soft, lower-protein wheat | Biscuits, crackers, cakes; blended into some breads |
| Soft White (SW) | Soft, low-moisture wheat | Noodles, cakes, pastries and confectionery |
| Hard White (HW) | Hard wheat with a white bran | Noodles, wholemeal and high-extraction flour, pan breads, flatbreads |
| Durum | The hardest wheat, amber colour, high gluten | Pasta, couscous and some Mediterranean breads |
